Peanut Butter Crunch Truffles

I remember these from when I was a young girl at home. My Mom always made delicious Christmas treats much to the delight of all of us!! The original recipe does not have Rice Krispies in it. If my memory serves me correctly (and this is not something to set in stone ☺) it was after I was married that I found a recipe that had the Rice Krispies in it and I haven't made them without since. They add a delightful crunch with all the sweetness. 2 sticks butter, softened 2 cups peanut butter, room temperature ½ teaspoon salt 4 cups Rice Krispies cereal 3 - 4 cups powdered sugar melted chocolate for dipping Mix peanut butter, butter, and salt in a mixer bowl.  Stir in some of the powdered sugar,  Add rice Krispies cereal.                                        ...

Créme de Menthe Brownie Truffles

In the original recipe these are simply brownies that are irresistible if you like the combination of chocolate and mint. I had a flash of inspiration one day recently when I was trying to decide what kind of truffles I wanted to make for gifts when I thought of these rich, decadent brownies and thought of dipping small squares in melted chocolate instead of icing them as usual. They did not disappoint me. They are scrumptious!! I will give you the recipe for the bars and show you pictures of them as truffles instead. Turn oven to 350°. Spray a 9 x 13 glass baking dish with non stick spray. 1 cup white sugar ½ cup butter, softened 4 eggs 1 (16 oz.) bottle Hershey's chocolate syrup 1 cup all purpose flour (Gold Medal)  ½ teaspoon salt 1 teaspoon vanilla Cream butter and sugar together until light and fluffy. Truffles

Every year at Christmas time my sister-in-law Judith brings some yummy truffles along to our family gathering. She has a couple of different recipes that she uses and I chose this one because it has less sugar. They are creamy and delicious and not as difficult as I imagined them to be. A little time consuming maybe, but definitely worth the effort. The mint truffles were my own idea. I took the Créme de Menthe brownies and cut them into small squares and dipped them in chocolate instead of putting the chocolate icing on top that the recipe asks for. They are SO good! I will share the recipe for these and the peanut butter ones in a different post. Rice Krispy Rollups

Here is another chocolate and peanut butter concoction that is totally irresistible and so easy to make. I sometimes make these instead of cookies if  I'm not in the baking mood. The only trouble is they never last long. Here's what you'll need: ¼ cup butter, melted 10½ ounces mini marshmallows 5½ cups Rice Krispies 1½ cups milk chocolate chips ½ cup peanut butter Melt butter in a 6 quart kettle, add marshmallows. Melt completely over low heat. Add the Rice Krispies. Mix well. Spread evenly into a greased 10½ x 15½ baking sheet. In a microwave safe bowl combine chocolate chips and peanut butter.  Melt at 1 minute intervals until completely melted, stirring after each minute. Spread on top of Rice Krispy mixture. Let set in a cool place till chocolate mixture sets up. Be careful not to let the chocolate get too hard, it will not make a neat roll if you do. Loosen all around with a metal spatula. Roll, start...
