Power Breakfast

  I figured Monday morning is a great time to start out with a breakfast of all the good stuff. When I say ALL that IS what I mean. Well, IMO, that is. :)   Onions and, mushrooms, and garlic sautéed in Avocado and Coconut oils till tender. Add a handful of each Organic baby Kale and Spinach. Continue to saute until wilted. Place on a plate and keep warm.   4 oz. Wild Caught Salmon, cooked and crumbled in the same oils as the veggies 1 sm. egg, scrambled Asparagus Spears   When finished place on the bed of sautéed veggies.    Garnish with:   Avocado Slices   Seasonings:     Dee-licious!!   Kind of a step up from my breakfast yesterday...     ...wouldn't you say? haha   Although that cake is nothing to sneeze at!! Grilled Butterfly Venison Tenderloin

  Nothing quite beats a steak on the grill, even in a winter that just won't end!    Simple, healthy, and oh.so.delicious!   We have lots of venison in the freezer and these tenderloin pieces are our favorite. Thaw, rinse, pat dry and season with Weber's Steak and Chop seasoning and a dash or two of Worcestershire Sauce. Refrigerate. About 30-45 minutes before you're ready to grill remove them from the refrigerator and let come to room temperature.   Heat grill, and put these babies on and grill to medium well. Place in a large pan with a tight lid and let set for a few minutes till ready to serve.   Serve with Avocado and Feta Salsa. Yum   Avocado Tomato Feta Cheese Red Onion Fresh Ground Black Pepper Sea Salt Olive Oil Red Wine Vinegar   Mix and let marinate before serving.   I'm off to spend some time with my husband as he waits in the city for his truck to be fixed. Trim Healthy Parfait

Do you ever get that "I'm totally over food!!" feeling? Well that's where I'm currently at. I'm tired of thinking about food and what I should prepare for the next meal or who might or might not like what I do prepare. So meals have been simple around here for quite a while and usually contain a salad and meat of some kind. I make no apologies for this because this seems to be what everyone feels the best on anyway and it's not time consuming. At least not usually. :) Wraps are another easy meal that we all enjoy with one exception. "The Princess" isn't crazy over them but she has to figure something out on her own if she doesn't like what is on the table, which she usually does. :)   Lunch is even simpler since it's just me and the photo above is one of two things that I currently enjoy the most. Easy, refreshing, with all the right components. Fruit, protein, fiber, and healthy fats. What's not to like?   And it...

Cran Apple Crunch Salad

  Over the years I've tried at different times to like cottage cheese but just never could say that, yes, I definitely enjoy this! Recently I was reading through the Trim Healthy Mama book and came across a recipe with cottage cheese that made me decide to try it ... again. I added a few ingredients to the original recipe because I thought I would like it better. And... I can honestly say, yum, I loved it! :)   1 Large Apple, diced  Splash of Lemon Juice Toss together.   Add: 1 cup Cottage Cheese 1 Celery Rib, diced 1/3 cup fine, unsweetened Coconut ½ cup dried Cranberries 1/8 cup finely chopped Walnuts Salt, to taste Give it a stir and enjoy! ♥     

Poached Egg in a Zucchini Nest

    Some mornings just need a delicious start.   Okay, ALL mornings should start out on a good note, and most of them do! :) But just in case, good food certainly helps!    ½ zucchini, shredded ½ smallish onion, shredded button mushrooms, sliced butter 1 poached egg ½ Tablespoon bacon bits salt, pepper, & red pepper flakes   Saute zucchini shreds, onion, and mushrooms until tender and beginning to brown.   Meanwhile prepare a poached egg by cracking an egg into an inch of boiling water. Continue to boil gently until desired doneness is reached.   Enjoy with a few bacon bits for a yummy satisfying breakfast.                                                    ...

Chicken Salad

  I posted this recipe a couple of years ago but had forgotten how good it was. Today I did a remake and enjoyed it again for lunch with the addition of alfalfa sprouts and ground flax seeds. It was just as amazing as it was two years ago!   Enjoy!   3 cups chicken breast, roasted and diced 1 cup Savoy cabbage, thinly sliced then chopped ½ - ¾ cup celery, diced ¼ cup green onions, thinly sliced ½ cup sliced almonds 1½ teaspoons ground golden flax seed meal Dressing: 1 cup olive oil mayonnaise 2½ teaspoons mustard Stevia Salt and Pepper, to taste Milk, to desired consistency   Serve in a slightly hollowed out avocado half and on a bed of sprouts. Yum! To make it easier to scoop out with a spoon cut the remaining avocado in squares (leaving them in the shell) before placing the sprouts and a scoop of chicken salad on top.   ♥Blessings♥ 

Secret Ingredient Broccoli Soup

  Figuring out ways to outsmart unhealthy additives to food has been something I enjoyed doing off and on for the past 9-10 years. I've definitely fallen 'off the wagon' a time or two in those years but it's still always there in the back of my mind and so I get back on again.   Confession: I have trouble staying focused once I feel like I know how to do something. I enjoy a new challenge, hence the reason for falling off said wagon. Does that even make sense?   Yesterday I had an inspiration like that and couldn't wait to try it. I love Broccoli Soup but the flour and Velveeta Cheese that is normally used for thickening are two things currently on my naughty list. I don't purchase Velveeta unless, well... never... if I can help it!   I had a few Avocados in the fridge full of healthy fats and friendly as ever.
