Peanut Butter Crunch Truffles

Image
I remember these from when I was a young girl at home. My Mom always made delicious Christmas treats much to the delight of all of us!! The original recipe does not have Rice Krispies in it. If my memory serves me correctly (and this is not something to set in stone ☺) it was after I was married that I found a recipe that had the Rice Krispies in it and I haven't made them without since. They add a delightful crunch with all the sweetness. 2 sticks butter, softened 2 cups peanut butter, room temperature ½ teaspoon salt 4 cups Rice Krispies cereal 3 - 4 cups powdered sugar melted chocolate for dipping Mix peanut butter, butter, and salt in a mixer bowl.  Stir in some of the powdered sugar,  Add rice Krispies cereal.                                        ...

Créme de Menthe Brownie Truffles

Image
In the original recipe these are simply brownies that are irresistible if you like the combination of chocolate and mint. I had a flash of inspiration one day recently when I was trying to decide what kind of truffles I wanted to make for gifts when I thought of these rich, decadent brownies and thought of dipping small squares in melted chocolate instead of icing them as usual. They did not disappoint me. They are scrumptious!! I will give you the recipe for the bars and show you pictures of them as truffles instead. Turn oven to 350°. Spray a 9 x 13 glass baking dish with non stick spray. 1 cup white sugar ½ cup butter, softened 4 eggs 1 (16 oz.) bottle Hershey's chocolate syrup 1 cup all purpose flour (Gold Medal)  ½ teaspoon salt 1 teaspoon vanilla Cream butter and sugar together until light and fluffy. Add the eggs and mix well. Add chocolate syrup; Mix well. Add flour, salt, and vanilla and mix well. Pour into prepared pan and p...

Truffles

Every year at Christmas time my sister-in-law Judith brings some yummy truffles along to our family gathering. She has a couple of different recipes that she uses and I chose this one because it has less sugar. They are creamy and delicious and not as difficult as I imagined them to be. A little time consuming maybe, but definitely worth the effort. The mint truffles were my own idea. I took the Créme de Menthe brownies and cut them into small squares and dipped them in chocolate instead of putting the chocolate icing on top that the recipe asks for. They are SO good! I will share the recipe for these and the peanut butter ones in a different post. Here is what you will need: 1½ lb. chocolate wafers, I used Wilbur chocolate 8 oz. cream cheese, softened 1 lb. chocolate for coating ½ - ¾ teaspoon flavoring of your choice I used raspberry, orange, mocha For the mocha flavor: 3 Tablespoons instant coffee dissolved in 2 teaspoons hot water For each flavor, melt the 24 oz. c...

Hot Creamy Dried Beef Dip

If you are looking for a quick and easy appetizer or a satisfying hearty snack, this would fit the bill for both. This is my sister Karen's recipe out of her cookbook 'Spice of Life'. Several months ago I was talking to the secretary at the school that our three youngest attend. In the course of our conversation it was mentioned that they have staff meeting every Thursday after school and they usually have a snack that they take turns bringing. I'm always looking for opportunities to prepare food that I don't typically make just for us. So of course the next words out of my mouth were, "Hey I'd love to bring you guys a snack sometime". Tonight was the night and this is what I brought them with some Chocolate Cream Pie with Peanut Butter Cups and Vanilla Biscotti Coffee. I hope they enjoyed it because I had fun preparing it (and sampling) it now and then.☺ It's super easy and takes almost no time to prepare. I especially enjoy eating it with ...

Molasses Sugar Cookies

Image
A few years ago when we were preparing for our holiday visit to Ohio I called my brother and asked what he gets hungry for that he rarely ever gets to eat. "Molasses Cookies dipped in white chocolate," he said without hesitation. I was a little surprised, but set out to make his request. This year we will not make it out there for Christmas but I've been working on a box of goodies to send out to them and these are among them once more. I used a different recipe this year and they are even better than before. And the white chocolate mellows out the sharp spice flavor. 1 cup butter, melted 2 cups white sugar ½ cup Brer Rabbit Molasses mild flavor 2 eggs 4 cups flour 4 teaspoons baking soda 1½ teaspoons cloves ½ teaspoon ginger 2 teaspoons cinnamon ¾ teaspoon salt Melt butter. Let cool. Add sugar, molasses, and eggs. Beat until well mixed. Add spices, baking soda, and salt. Add flour and mix well. Cover tightly and chill in refrigerator for an ...

Granola Bars

Another super yummy, yet simple recipe I got from my sister Becky. She adds golden raisins instead of the M&M's, but since some of my children are not fond of raisins, the M&M's work better for us. 4 cups oatmeal 4 cups rice krispies 1½ pkgs. graham crackers, crushed 1 cup golden raisins* or 1 cup mini M&M's 1 cup coconut, toasted 2-10.5 ounce pkgs. mini marshmallows 1 stick butter ¼ cup oil ¼ cup honey Put the coconut on a shallow baking sheet. Toast in a 350° oven. Watch closely and stir a few times to avoid over browning. I'm not sure how long it takes but it browns quickly once it gets started. Crush graham crackers in a sturdy Ziploc gallon sized bag with a rolling pin until fine. Combine the first 5 ingredients in a large mixing bowl. Stir until well mixed. Set aside. Spray a 13 x 18 pan with sides with non stick spray. Melt butter in a large kettle or saucepan. Add the marshmallows. Melt completely over low heat, stirring freque...
