Créme de Menthe Brownie Truffles


In the original recipe these are simply brownies that are irresistible if you like the combination of chocolate and mint. I had a flash of inspiration one day recently when I was trying to decide what kind of truffles I wanted to make for gifts when I thought of these rich, decadent brownies and thought of dipping small squares in melted chocolate instead of icing them as usual. They did not disappoint me. They are scrumptious!!

I will give you the recipe for the bars and show you pictures of them as truffles instead.


Turn oven to 350°. Spray a 9 x 13 glass baking dish with non stick spray.

1 cup white sugar
½ cup butter, softened
4 eggs
1 (16 oz.) bottle Hershey's chocolate syrup
1 cup all purpose flour (Gold Medal)
 ½ teaspoon salt
1 teaspoon vanilla

Cream butter and sugar together until light and fluffy.



Add the eggs and mix well.



Add chocolate syrup;


Mix well.


Add flour, salt, and vanilla and mix well.


Pour into prepared pan and pop into the oven.


Bake for 25-30 minutes.

Cool brownies completely before spreading with mint layer.

1½ cups powdered sugar
½ cup all purpose flour
½ teaspoon mint extract
3 drops green food coloring
½ cup butter, softened
2 Tablespoons warm water

Combine all ingredients in a mixer bowl.



Mix using the paddle attachment until until all ingredients are wet then turn on high and whip it till it's fluffy.

                                    

Spread onto cooled bars.*


Set in a cool place till this layer is set and won't smear when you add the icing.

Icing:
6 Tablespoons
6 oz. chocolate chips


*This is where I cut them into 1 inch squares and dipped them in melted chocolate for the truffles.




The first ones I dipped I garnished with a small piece of créme de menthe candy but decided later I like them plain and drizzled with green chocolate.

All I can say is yum, yum, yum!! Give your taste buds a Christmas treat! They won't be disappointed. ☺
