Molasses Sugar Cookies



A few years ago when we were preparing for our holiday visit to Ohio I called my brother and asked what he gets hungry for that he rarely ever gets to eat. "Molasses Cookies dipped in white chocolate," he said without hesitation. I was a little surprised, but set out to make his request.

This year we will not make it out there for Christmas but I've been working on a box of goodies to send out to them and these are among them once more. I used a different recipe this year and they are even better than before. And the white chocolate mellows out the sharp spice flavor.



1 cup butter, melted
2 cups white sugar
½ cup Brer Rabbit Molasses mild flavor
2 eggs
4 cups flour
4 teaspoons baking soda
1½ teaspoons cloves
½ teaspoon ginger
2 teaspoons cinnamon
¾ teaspoon salt

Melt butter.


Let cool.

Add sugar, molasses, and eggs.


Beat until well mixed.


Add spices, baking soda, and salt.


Add flour and mix well.


Cover tightly and chill in refrigerator for an hour or two.

When you are ready to bake them preheat oven to 375°.

Using a size 70 cookie scoop;


drop into a small bowl with additional white sugar and turn to coat.


Drop onto a baking sheet, do not flatten, and bake for 8-10 minutes.

Remove from oven and allow to set on the pan for about a minute. Remove to wire rack to cool.

They are delicious like this with cold milk ...but if you have a brother...anyway, melt some white chocolate and dip half the cookie in it and lay it on a piece of waxed paper and allow chocolate to set before storing in an airtight container.
