Double Chocolate Chip Cookie Bars

Chocolate yumminess!



Yesterday I needed to bake something for lunches and I was craving chocolate, what's new?! and thought I had found a recipe to try that sounded pretty good, but as I was putting everything together it sort of morphed into something else when I realized it wouldn't be the chocolate fix I was craving. So this is what it ended up as and they are super yummy! I would recommend making them a day ahead to let them set up properly because they are better today than they were yesterday. When I first tasted them I didn't think they were chocolaty enough, I know, the craving is out of hand! anyway I remembered that I had some Chocolate Fudge Butter Cream Icing in the fridge from a previous baking spree and so I heated it in the microwave just enough to drizzle with a fork. Aahhh, perfect! and the craving is gone! ☺

Ingredients:
4 eggs
1½ cups brown sugar
1½ cups white sugar
2 cups butter, softened
2 small pkgs. instant vanilla pudding
5 cups all purpose flour
½ cup cocoa powder
2 teaspoons baking soda
2 teaspoons vanilla
2 teaspoons water
2 teaspoons salt
2 cups chocolate chips

Chocolate Icing, for drizzling

Preheat oven to 350°. 

Combine butter and sugars and beat until light and fluffy. (I think I will try to decrease the sugar next time. If you choose to do so expect your bars to be more cake like rather than have a brownie texture.)

Beat in eggs and vanilla and water.

Add pudding, soda, salt, and cocoa powder.

Add the flour.

Mix well after each addition scraping down sides as necessary to ensure even mixing.

Add chocolate chips.

Press into greased 12 x 17 pan and bake for 20-25 minutes.

Remove from oven and allow to cool completely before cutting and serving.

Drizzle with chocolate icing.
