Coconut Almond and Date Snack Squares


One of my favorite go to snacks that isn't loaded with things that are bad for my health is just a simple pitted date. I know, sounds boring and without imagination. But they take away the sugar craving because they are naturally sweet and I love how chewy they are. I decided to add a bit more to them by throwing them into the food processor with raw almonds, (another favorite grab and go), unsweetened coconut and ground flax seeds. They turned out super yummy and while they might not be a chocolate brownie, they are wholesome and delicious and you get to feel good about your choices. ☺

2 lbs. pitted dates
1 cup sliced almonds
1 cup unsweetened medium coconut
¼ cup ground flax seeds

Cut dates in half, (they are not always pitted) and place all ingredients into food processor bowl in layers and chop till it's as fine as you can get it.

Line a 9 X 13 pan with parchment paper or plastic wrap and press date mixture very firmly into pan. Cut into small squares and wrap individually.
