Smoky Cheddar Bacon Pepper Poppers

 
 
Do you love Jalapenos? Bacon? Smoked Cheddar Cheese?
Then these slightly sweet Pepper Poppers are for you!!
 
The amount of heat is up to you. Whether you leave in the seeds or take them all out. If you keep them in you will want something cold to drink right after eating one, but in my opinion they are best with most of the seeds in. I like them spicy!
 
2/3 cup smoked cheddar cheese, shredded
3 Tablespoons Bacon Bits

¾ cup cream cheese, softened
2 teaspoons brown sugar
1 Tablespoon horseradish
½ teaspoon dried onion flakes
Freshly Cracked Black Pepper
12-15 Jalapenos, halved
bacon strips for wrapping
 
In a bowl combine the first 6 ingredients and mix well.
 
Slice peppers in half (wear gloves) and take out the seeds you don't want and discard.
 
Stuff the peppers with the cream cheese mixture and wrap with a piece of bacon. Secure with a toothpick. I trimmed a lot of the fat off of the bacon so it took about 1 piece for each pepper half.
 
Refrigerate until the cream cheese is hard again.
 
Brown Sugar Glaze:

1/3 cup brown sugar
1 Tablespoon (approximately) water
Worcestershire Sauce
liquid smoke flavoring
 
In a small bowl combine the glaze ingredients adding just enough water to make a medium syrup and just enough of the Worcestershire Sauce and liquid smoke to add flavor.
 
Grill until bacon is cooked and brush with the brown sugar glaze the last few minutes on the grill.

Are you enjoying the Fall weather? It has been gorgeous outside the last few days and I trimmed some Bittersweet Berries from along the edge of the woods tonight to add the Fall Décor outside. They bring back so many good memories from when I was a young(er) girl. :) Tomorrow I have plans to work outside doing some catching up in the landscaping and possibly planting a few bushes.
 
 
I'm playing nurse maid for my second son. A painful sprained ankle, sigh. Poor guy, everything like that seems to happen to him (or so he says). But he puts everything he's got into everything he does so I guess an injury can be expected now and then? He's hoping it lasts till soccer is over, that's what he was playing when it happened and it is his least favorite sport. Not sure about his way of thinking but we'll wait and see. :)

Browned Butter Vanilla Caramel Icing


I've been eating this Caramel icing practically since I was born but never took the time when I prepared it to brown the butter and add the Vanilla till yesterday. Yes, I know! I'm behind the times!! But, no matter, I've caught up now, just a little. :) I chose a Favorite Buttermilk Cookie recipe to pair with the icing for a little bit of yummy. Okay, a lot of yummy! The photo above looks innocent, but don't kid yourself, some cookies are not as innocent as they appear. Yikes! I'm storing them in the basement fridge so I don't have to look at them all the time. You know, out of sight, out of mind! haha
 
Back to the icing:
¾ cup salted butter, browned
1½ cups brown sugar
2/3 cup (5 oz.) evaporated milk
1/3 teaspoon salt
2½ teaspoons vanilla extract
2 -2½ cups powdered sugar
 
Brown (do not burn!) the butter over medium high heat stirring constantly.
 
Transfer immediately into a clean saucepan.
 
Add the sugar and bring to a boil over medium heat, stirring constantly.
 
Very Carefully add the evaporated milk and salt and stir. Boil for 1 minute.
 
It will not be smooth like regular caramel frosting. It looks kind of curdled but it will be fine.
 
Remove from heat and stir in Vanilla extract.
 
Cool till thickened and about room temperature, stirring occasionally.
 
Transfer to a mixer bowl and add powdered sugar till you have a spreadable consistency. Beat till smooth.
 
I used approximately 1 Tablespoon of icing per cookie and frosted 34 cookies.

A Few Fall Favorites

There's a difference in the air out there. Cool mornings, gorgeous warm days with beautiful blue skies and amazing sunsets in the evening.
 
Fall weather! and  I couldn't be more excited! It's invigorating to say the least.
 
The beginning part of this week was used filling an order for cheesecakes for a wedding. 18 of them. That translates into 54 lbs. of cream cheese and 16-20 lbs. of sugar!! It was a lot of fun but I was ready to do something out of the kitchen after that. :)
 
These are two of 4 the kinds I made. The other two are not on the blog yet. They were a Reese's Peanut Butter Cup and a Plain New York Style. Both delish!
 
 
 
 
 
This one reminds me so much of My Mom's Pumpkin Custard Pie. Yum!!
 

 
 
 
 
 
 
 
I briefly entertained thoughts of making a Latte this morning but decided the chill in the air doesn't linger long enough into the day to warrant all that extra sugar, so I refrained. Yay me? :)

Milestone Birthday!

 
Happy 18th Birthday to our firstborn!
 
18!!
 
To say that this number boggles my mind is an understatement! Time marches on I guess and waits for no one!
 
Andre loves being outdoors and is an avid hunter. He is quiet and easy going, enjoys children and is a loyal friend. He's very athletic and enjoys playing any action or contact sports with football being his first choice. He also volunteers on the local Fire Company with his Dad and brother. He is enjoying his Senior year in High School. :)
May God grant another year of blessings to the wonderful young man we call Son! We love you Andre!
