Crunchy Chocolate Caramel Chex


It's fast, easy, crunchy, sweet, and delicious!

What's not to love about all those?!

(Besides the fact that the word healthy is nowhere in sight!!)

My sister in law Bev first introduced this mix to me several years ago and I finally got around to making some last night for the first time. Now I wish someone would quickly eat the rest before I do! If you want something quick, sweet, and crunchy, this is it! And the whole batch is not really that big, just the right amount for a taste or two to satisfy your sweet tooth.☺



Ingredients:
8 cups chocolate chex cereal
¾ cup packed brown sugar
6 Tablespoons butter
3 Tablespoons light corn syrup
¼ teaspoon baking soda
¼ cup white chocolate chips, optional

1. Measure cereal into a large microwavable bowl; set aside.

2. In a 2-cup microwavable measuring cup, microwave brown sugar, butter, and light corn syrup uncovered on High 1-2 minutes, stirring after each minute, until melted and smooth. Stir in baking soda until dissolved. Pour over cereal.


Stir until evenly coated.


Microwave on High for 3 minutes, stirring after every minute. Pour onto parchment paper on the counter and spread it out. Cool for 10 minutes. Break into bite sized pieces.


3. In a small microwavable bowl, melt the white chocolate chips. stir until smooth and drizzle over chex mix. Allow to cool completely before storing in a tightly covered container.
