Better Cake Mixes

Ever wish those boxed cake mixes were a bit bulkier and bigger?  In a pinch, occasionally, I use cake mixes and when that happens I like to add a few ingredients along with the required ones to stretch it a bit and make it a little more worth the effort. With 3 big boys around, (2 in the neighborhood of 6', they like to remind me they are now taller than both their parents ☺), baking a cake mix without adding these ingredients seems a bit like a "bandaid" for the cookie jar. Try it sometime and let me know what you think.

1 cake mix (any flavor) with required ingredients +
¾ cup flour (AP)
½ cup sugar
1 teaspoon baking powder
1/3 cup water
1 egg
1 Tablespoon oil

Mix all together and pour into a greased 12x15 bar pan and bake according to package directions.

Ice with desired icing, Butter Cream and Chocolate are my favorites, depending on the cake flavor.

This usually buys me a bit of time till I have time to bake something they really like.☺

Be Blessed!

  1. I've done this with biscuits too---just did it this morning, using a store bought mix (it was a back up), added in some more flour, some yeast (I like the fluffy way it comes out), and some milk powder, a little water, and it produced very nicely for our family of biscuit eaters!

    Great minds think alike!!

  2. That sounds easy enough, might have to try that sometime. Thanks Angie!

  3. That is a wonderful thing to know! I usually bake from scratch, but do occasionally pick up a cake mix if it's on clearance.

  4. This is a wonderful tip. Thanks for sharing.

  5. That's a great idea... I think boxed cake mixes are a bit "skimpy" these days too.
    Merry Christmas!

  7. What a great idea! Will surely try it out. Thanks for sharing. Happy holidays.

  8. Good to know! Your cookie jar bandaid comment cracked me up. It's hard to keep hungry boys happy, isn't it? Especially tall, hungry boys!
Have a truly wonderful and blessed Christmas, Martha!

  9. What a great idea for adding a homemade element to cake mix. I always have a box or two in my pantry for last-minute projects. I'll definitely have to give your recipe a try -- the crumb looks perfect!

  10. Would love you to join us on creative Thursday (which is ing this week to creative mondays ?

  11. Very interesting idea, Martha, and I can see where you're coming from with it, considering your handsome helpers :)). I haven't tried boxed cake mix, but then again, I can't compare to you in terms of family's food demands. I'll experiment with cake mix and see what I can come up with.

Happy New Year and best wishes for a healthy, prosperous 2012!

  12. Thanks for joining us at welcome to the weekend hop, following back :) would be great if you link some of your lovely cooking up in Creative Mondays too :)
