Lemon Cheesecake


I stumbled across this recipe quite a while ago (Taste of Home) and thought it might be interesting to try sometime. This weekend I needed to bake some things for a fundraiser and also prepare a dessert to share at church so I thought this would be the perfect time. I made a small 6 inch, an 8 inch, plus I had a bit of batter left so I baked it in a ramekin (so I would get to taste it) ☺ my taste buds were happy.


 I wasn't quite sure what the chocolate crust would be like with it but decided that it compliments it quite nicely. The Lemon Curd and Raspberries were my own idea and really set this delicious cheesecake apart! It's light lemony flavor was perfect with the curd and raspberries! ♥♥♥ The one I served at
church was quickly gone, appreciated by young and old alike.

Ingredients for an 8 inch:
1½ cups crushed chocolate graham crackers
6 Tablespoons butter, melted
3 pkgs. (8 oz.each) cream cheese, softened
1½ cups sugar
1½ cups sour cream
6 Tablespoons fresh squeezed lemon juice
3 Tablespoons all purpose flour
3 teaspoons grated lemon peel
1½ teaspoons vanilla extract
3 eggs, lightly beaten

Finely crush the graham crackers and mix with the melted butter. Press into the bottom of an 8 inch Springform pan that is sprayed with non stick spray. Place on a baking sheet, bake at 350° for 7-8 minutes or until set. Cool on a wire rack.

Reduce oven heat to 300°.

In a large mixer bowl, beat cream cheese and sugar until smooth and creamy. Beat in the sour cream, lemon juice, flour, lemon peel, and vanilla. Add the lightly beaten eggs; beat on low speed just until combined. Pour over prepared, cooled crust.

Place on a baking sheet. Bake for 1 hour (or till center is almost set). Turn heat off, prop the oven door open with a wooden spoon handle and leave cake in the oven for another 45 - 60 minutes. Remove from the oven and carefully run a sharp thin knife around the edges. Allow to cool completely then refrigerate overnight. Remove from pan and place on a serving platter. Serve plain or garnish as desired. I would love to try this with blueberries sometime...or strawberries...or...... does anyone need a cheesecake?!
