Peachy Baked Oatmeal


After a very long, tiring day this past Saturday I was hungry for a little comfort food that might also pass for reasonably healthy so I baked a little bit of this to take my make me forget that my feet were tired from standing in the kitchen all day. If you're wondering what I was doing I was canning salsa. Not my favorite thing to do but we enjoy it throughout the winter so...


The oatmeal is totally yummy by itself but I like to also add fruit sometimes. The peaches were a little tart but that was okay I didn't want to overload the sugar, there is enough in it the way it is! So far I've tried it with apples and blueberries as well. You can go here for those recipes. While they are all tasty I think the blueberries are my favourite fruit to add.

½ cup brown sugar
¼ cup butter, softened
1 egg
1½ cups oatmeal
1 teaspoon baking powder
½ cup milk
1/8 teaspoon salt
cinnamon
nutmeg

Cream butter and sugar together, then add the egg. Add the baking powder, salt, and spices.



 Then add the milk and oats alternately beginning and ending with oats.

Place peeled, sliced peaches and a little sugar in a small baking dish that is sprayed with non stick spray.


Cover with oatmeal and bake @ 350° for 35-40 minutes.



 Enjoy with milk or ice cream like I did even though I was concerned about the sugar. Doesn't really make sense unless you've had a long day doing something ...well never mind!☺

  1. This is so pretty in the round pan! My family loves baked oatmeal, but mine rarely looks this cute. I love the ice cream idea. I'm going to save some to do that with next time I make it!
