Buttermilk Cookies


I had some Buttermilk lurking in my fridge and I wanted to use it before it was yucky and we needed something yummy for the weekend so I decided on these. The icing alone is reason enough to eat them! As a little girl this is the icing I remember on just about everything. ♥ Caramel Icing!

And a bonus came with these, my sweet, handsome, resident chef helped me!

The ingredients:

1 cup shortening
1 cup brown sugar
½ cup white sugar
3 eggs
1 cup Buttermilk or Sour Cream
1 teaspoon vanilla
2 teaspoons baking powder
1 teaspoon baking soda
1 teaspoon salt
4 cups all purpose flour (Gold Medal)

Mix shortening and sugars till fluffy. Add eggs, buttermilk, and vanilla. Mix well, scraping sides occasionally. Stir in baking soda, baking powder, and salt. Mix. Then add flour and mix well.

Drop onto parchment paper lined baking sheet. I used my convection oven and baked them @ 350° for 10-12 minutes. Don't overbake!

Caramel Icing:
¾ cup butter
1½ cups brown sugar
¼ teaspoon salt
1/3 cup milk*
Powdered Sugar

* I still had some buttermilk left so I used this instead of regular milk. It did add a different flavor, not quite as sweet.

Melt butter and brown sugar over low heat until melted. Add milk and salt and bring to a boil. Boil 1 minute. Remove from heat and cool slightly. I like to set it in cold water for a bit to cool it quickly. Add powdered sugar, approximately 1 cup or so till it reaches the right spreading consistency. If you have leftover icing it lasts quite a while in the fridge and is great on graham crackers or chocolate, oatmeal, or spice cake.

  3. I am so excited to try these cookies. I was just in Berlin, OH Christmas shopping tried buttermilk cookies for the firs time and just have to make some of my own. Yum!
