Triple Treat Cookies

Peanut Butter and Chocolate-
what would we do without them?!

Last night I decided it's time again to make something good and sweet again. Years ago my Mom had made these delights when we were in Ohio visiting my family. They were sooo good! But for some reason I just never made them here at home. I changed that last night. The kids loved them! One of the boys said,"Man those things are good! I could eat a thousand of them!" While I very much doubt that he could, or that I would even let him get near the number 4 for the day, they are really, really good if you like peanut butter and chocolate, and who doesn't?

I was in the midst of baking when I discovered I had no powdered sugar for the icing. The rest of my clan were all at the batting cages and my van was at the garage so I called my in-laws who live across the street from a grocery store about two miles from here. Yep, you guessed it. Sweet man that he is, my FIL said he'd be happy to help. Thank You Sir! So he brought me some and the show here went on.☺ In all honesty these cookies would not need the icing but... they are really good with it!

And just to clarify to those of you who know us and know that my hubby and I are not eating this kind of thing right now, we both had a bite, that's right =1, and that's all!! ☺


Preheat oven to 350°.

Ingredients:
2/3 cup brown sugar
2/3 cup white sugar
1 cup butter, softened
1 cup peanut butter
2 eggs
2 teaspoons baking soda
1 teaspoon salt
3 cups all purpose flour (Gold Medal)
1 cup chocolate chips

Mix sugar and butters until very light and fluffy.


Add eggs and mix well.

Add baking soda and salt, stir again till mixed.

Add flour and mix well, scraping sides and mixing well again.

And last but not least mix in the chocolate chips.

Using a size 50 cookie scoop, drop onto a baking sheet and bake for 10-12 minutes. Do not overbake.


Filling:
½ peanut butter
1 teaspoon vanilla
1/3 cup milk
2 Tablespoons soft butter
2-3 cups powdered sugar

Put all the filling ingredients into mixer bowl and beat.

Spread filling on the bottom of one and place another on top making a sandwich.
