Best Brownies

It's the end of the day and you know you want something fresh baked for the next morning, whether it's for the lunches you have to pack or just something yummy to go with your morning coffee, but your energy level is not the greatest.

Here is a chocolate-y cocoction that I often turn to when I get in this kind of pinch and need something fast. You will be in and out of the kitchen in a hurry and still have time to relax with the rest of your family.

These brownies are also a great dessert with any meal with a little bit of  vanilla or peanut butter ripple ice cream. mmm, yum!!

One more thing to like about them is that they are mixed by hand and you are not left with a lot of dishes to wash. Always a plus!


Preheat oven to 350°. Spray a 9 x 13 glass baking dish with non stick spray.

The ingredients:
1 cup butter, melted
2 cups sugar
2 teaspoons vanilla
4 eggs
1 cup flour, Gold Medal
2/3 cup cocoa
½ teaspoon baking powder
½ teaspoon salt
1 cup chopped nuts (optional)
½ cup chocolate chips (optional)
¼ cup mini M&M's (optional)

Did you know that when a recipe asks for baking powder it's a good idea to let the batter rest for 15 minutes before baking to let the baking powder start doing it's thing?

Put white sugar and vanilla into a medium sized bowl. Add melted butter.


Stir until combined. I like to use my wooden spoon with the hole in the middle.


Add eggs.


Stir vigorously.


In a seperate bowl combine all the dry ingredients.

Gradually add to the egg mixture. (In two batches.)


Stir well after each addition.

Stir in chocolate chips and nuts.


The original recipe asks for nuts and icing instead of chocolate chips and M&M's. I never add the icing and only sometimes add the M&M's. I did tonight because my daughter was helping me.☺ Most of the time I add a ½ cup of chocolate chips to the batter and sprinkle some more on top. Either way they're delicious!

Pour into prepared baking dish and spread evenly.


Sprinkle with chocolate chips or M&M's.


Bake for 25-30 minutes. Let cool before cutting and serving.

  1. does this work w/the sugar cut in half?! :)

  2. I expect it would work but they might not be as chewy, sugars liquify in the baking process and they will be flatter unless perhaps baked in a smaller pan. Adding slightly more baking powder might help them stay puffier too. Try it and let me know :)
