Crunch Bars
With today being a snow day for the school children, I was wondering what I could give them to do that they would enjoy. The two boys that were here with me are the two that enjoy spending time in the kitchen. It didn't take my 12 year old long to agree to baking. He got the cookbook out and started reading recipes. We decided on these simple yet delicious bars. How could you go wrong with chocolate and peanut butter with a crunch to boot?! He did a great job on them!!
Preheat oven to 350°. Spray a 9 x 13 glass baking dish with non stick spray.
Here's the recipe:
½ cup butter, softened
¾ cup white sugar
2 eggs
1 teaspoon vanilla
¼ teaspoon salt
1 Tablespoon cocoa
¼ teaspoon baking powder
¾ cup flour
Topping:
2 cups miniature marshmallows
1 cup peanut butter
1 cup chocolate chips
2 cups Rice Krispies
Cream butter and sugar until light and fluffy. Add eggs and vanilla, beating well. Stir in flour,salt, baking powder, and cocoa. Spread evenly into prepared pan. Bake for 15-20 minutes. Remove from oven and sprinkle with mini marshmallows and return to oven for another 3 minutes. Cool. In a microwave safe bowl melt peanut butter and chocolate chips together. Stir until smooth. Add Rice Krispies and stir till combined. Spread over top of the marshmallows and allow to cool completely until chocolate is set. Cut into squares and serve.
