Chicken Quesadillas



These are very simple but have wonderful flavor! I added caramelized onions and they gave these a sweetness that is so yummy. It kind of depends what I have on hand as to how I make these but this time it was just the chicken, cheese, caramelized onions, and butter. Mmmm, makes me hungry all over again!


Cut the chicken breast into small thin squares.


Caramelize 1 large sweet or yellow onion that is chopped medium/fine. Put into a saute' pan with a little oil and butter.

Saute' slowly till they have a nice brown color but are not burnt. If they are not finished but are sticking to the pan to much add a little oil, but you don't want a lot of liquid in the pan. Just keep them stirred. This takes about 20-25  minutes or so. If you brown them too quickly they won't be as sweet.

After these are finished add some butter to the same pan and a single layer of chicken pieces. Sprinkle Taco Seasoning over top.


Let cook on the one side then turn each piece over and cook the other side. This does not take very long so watch them closely if you want very tender chicken.

On a flat skillet melt a little bit of butter;


place a tortilla on top.


While that side is toasting put some chicken on half of the tortilla and fill in the gaps with the onions.

Sprinkle with cheese.


I like to drizzle about 1 teaspoon of browned butter over the cheese. I know, more butter, but it's totally worth it! Fold the empty side of the tortilla up over the filled side and flip the whole thing over to melt the cheese.


I like how the outside is crispy when you toast them like this.

Cut into wedges and serve with sour cream and salsa.

If I am making a lot of these I keep the finished ones in a low temperature oven (200°) on a cookie sheet until the rest are done.
