Italian Salad

I love everything about this salad.

I could eat it everyday for a long time... and maybe I will. At least until the marinated tomatoes are all gone.☺

Again this is a super easy salad with robust flavor, but plan ahead because the tomatoes need to marinate for 24 hours.

For the dressing:

1 pkg Zesty Italian dressing mix
1 (16 oz.) bottle Italian dressing
4 tomatoes

Combine the dry mix and the bottled dressing and mix well.

Dice the tomatoes.

Add to the dressing.

Stir. Cover and let set on the counter for 24 hours. They are good enough to eat just like this!! ♥ them!!

For the salad:
2 heads Romaine lettuce
½ head of iceberg lettuce
1 purple onion, sliced thin
1 can Pepperoncini
1 small can black olives (optional)
1 pkg. croutons
2 cups freshly shredded Parmesan cheese
½ cup grated Parmesan cheese 

Mix salad ingredients together. Just before serving mix the marinated tomatoes into the salad and serve immediately. This is what the original recipe calls for. But... to avoid having soggy leftover salad I like to serve the tomatoes seperately.
