Chicken Pot Pie


Is anyone in the mood for some simple, quick comfort food? That is what I needed last night and the boys are always happy when this is on the menu. You don't need much else with this yumminess because you have the meat, veggies, and bread all in one dish. I usually just thaw some applesauce and we are good to go.


The ingredients are very simple and basic and sometimes I like to omit the potatoes and the crust and serve it over mashed potatoes. But most often I simply prepare it like the recipe and they gobble it up and always there are heartfelt thank yous to me for making one of there favorites. Those nights I am the Queen! ☺
                                                             Preheat oven to 400°
                                                             Spray a 9 x 13 pan with non-stick spray

                                                            4 cups chicken, cooked and deboned,
                                                            and cut into small pieces
                                                            1 cup carrots, diced
                                                            1 cup peas
                                                            1 cup potatoes, diced
                                                            3 cups chicken broth
                                                            1 cup milk
                                                            2/3 cup flour

Cook the veggies in the broth until soft, but not mushy.

 Mix together the milk and flour and add to the veggies using only enough to thicken it to your liking. I don't always use it all. Then add the chicken and stir gently.

 Pour into prepared pan and set aside.

                                                             For the crust:
                                                             1½ cups flour
                                                             ¾ teaspoon salt
                                                             1 tablespoon baking powder
                                                             1½ cups milk
                                                             6 tablespoons butter, melted

Combine all ingredients and stir with a sturdy wire whisk until smooth. Spoon onto chicken mixture and sprinkle with parsley.



 Bake for 30 minutes.
