Granola Bars



Another super yummy, yet simple recipe I got from my sister Becky. She adds golden raisins instead of the M&M's, but since some of my children are not fond of raisins, the M&M's work better for us.
4 cups oatmeal
4 cups rice krispies
1½ pkgs. graham crackers, crushed
1 cup golden raisins* or 1 cup mini M&M's
1 cup coconut, toasted
2-10.5 ounce pkgs. mini marshmallows
1 stick butter
¼ cup oil
¼ cup honey

Put the coconut on a shallow baking sheet.


Toast in a 350° oven. Watch closely and stir a few times to avoid over browning. I'm not sure how long it takes but it browns quickly once it gets started.


Crush graham crackers in a sturdy Ziploc gallon sized bag with a rolling pin until fine.


Combine the first 5 ingredients in a large mixing bowl.


Stir until well mixed. Set aside.

Spray a 13 x 18 pan with sides with non stick spray.

Melt butter in a large kettle or saucepan.


Add the marshmallows.


Melt completely over low heat, stirring frequently.


Remove from heat, add the oil and honey.


Stir until well mixed.

Pour over oatmeal mixture. (I sprayed the mixing bowl and the spatula with non stick spray)


Working quickly, mix well.


Transfer to prepared pan and spread loosely.


*If you are using the golden raisins just press the mixture firmly and evenly into the pan.

If you are using M&M's sprinkle them over the top of the mixture. I don't add them until now because they melt too quickly if stirred in with the warm marshmallow mixture. Or you could try keeping them in the freezer till they are frozen and mix them in with the main mixture.


Press firmly and evenly into pan. Cut into bars and enjoy.
