Hot Creamy Dried Beef Dip
If you are looking for a quick and easy appetizer or a satisfying hearty snack, this would fit the bill for both.
This is my sister Karen's recipe out of her cookbook 'Spice of Life'.
Several months ago I was talking to the secretary at the school that our three youngest attend. In the course of our conversation it was mentioned that they have staff meeting every Thursday after school and they usually have a snack that they take turns bringing. I'm always looking for opportunities to prepare food that I don't typically make just for us. So of course the next words out of my mouth were, "Hey I'd love to bring you guys a snack sometime". Tonight was the night and this is what I brought them with some Chocolate Cream Pie with Peanut Butter Cups and Vanilla Biscotti Coffee. I hope they enjoyed it because I had fun preparing it (and sampling) it now and then.☺
It's super easy and takes almost no time to prepare. I especially enjoy eating it with the fresh crispy crunchy veggies.
8 ounces cream cheese, softened
8 ounces sour cream
4 ounces dried beef, rinsed, drained, and finely chopped
2 Tablespoons finely diced green pepper
1½ Tablespoons minced onion
½ teaspoon garlic powder
Fresh ground black pepper, desired amount
Rinse dried beef ;
Drain well. I squeezed the water out with my hand.
Chop veggies.
Combine all ingredients in a medium bowl.
Stir by hand until evenly mixed.
Pour into a 1 quart baking dish and bake @ 375° for 30 minutes.
Serve hot with veggies and/or crackers of your choice. Yum!

In the UK we dont have "dried beef" what is the alternative, do you know?
