Truffles


Every year at Christmas time my sister-in-law Judith brings some yummy truffles along to our family gathering. She has a couple of different recipes that she uses and I chose this one because it has less sugar. They are creamy and delicious and not as difficult as I imagined them to be. A little time consuming maybe, but definitely worth the effort.

The mint truffles were my own idea. I took the Créme de Menthe brownies and cut them into small squares and dipped them in chocolate instead of putting the chocolate icing on top that the recipe asks for. They are SO good! I will share the recipe for these and the peanut butter ones in a different post.

Here is what you will need:

1½ lb. chocolate wafers, I used Wilbur chocolate
8 oz. cream cheese, softened
1 lb. chocolate for coating
½ - ¾ teaspoon flavoring of your choice
I used raspberry, orange, mocha

For the mocha flavor:
3 Tablespoons instant coffee dissolved in
2 teaspoons hot water

For each flavor, melt the 24 oz. chocolate in the microwave;


(I used the red chocolate for the raspberry) Pour over softened cream cheese that is room temperature. It's a good idea to beat the cream cheese till it's smooth before adding the chocolate. I didn't as you can see in the picture but it really was quite soft so it still mixed well without lumps.


Add flavoring and mix well. Refrigerate a bit to let it get firm so it handles better. I used a size 100 cookie scoop to form the balls and dropped them on a parchment paper lined baking sheet. Set them in a cool place so they firm up some more and them I rolled them between my palms to make them nice and smooth.


Melt chocolate for dipping and coat each truffle one at a time. I used a regular fork to pick them up out of the chocolate and a table knife to scrape it off the bottom of the fork.



 Set back on the baking sheet till the chocolate is completely set. Use additional contrasting chocolate or assorted sprinkles to mark the top according to flavor.



To do this I put the melted chocolate into a sandwich baggie and cut a very small corner off to squeeze it out of to pipe it onto the truffle. But this takes patience, if you try to hurry it and press too hard this happens.


Not good, or pretty, but lesson learned. ☺
