Amish Peanut Butter Spread

                             How do I love thee?!
                                                             Let me count the ways...

From the time I was old enough to eat bread as a little tot till I was 20½, I was lucky enough to eat this delicious peanut butter spread every other Sunday for lunch with Homemade Bread (previous post). I grew up in Holmes County, Ohio and in the Amish church I attended till I was 20 years old, this was a large part of the noon meal. We would also have deli meat, usually ham or Trail Bologna, and some kind of cheese, and an assortment of pickles. For dessert there was tea or coffee with cookies or bars or sometimes pie. And yes, in case you were wondering, I ate the ham and pickles on the same piece of bread as the peanut butter. It was scrumptious!! I know, who would ever imagine eating peanut butter with ham and cheese and pickles! But really, I didn't know it was a strange combo. So every now and then I get really hungry for this meal and feel compelled to treat my family to these delights from my childhood because I would hate for my kids to miss out on some of the best tasting food I can give them! ☺☺☺

Try it sometime!! And do let me know what you think!

And just in case you have never had Trail Bologna, you must go to Ohio and get yourself some!! It is the best thing of it's kind! I asked the people where this stuff is made if they sell it anywhere in Pa. Alas they said no. They may not sell it over state lines because of not having the proper permits, whatever that means. Sad indeed! Soon after we were married I was hungry for this Trail Bologna stuff and in my mind I thought, ring bologna is probably all sort of the same, and purchased one at the local market. Boy was I in for a shocker! NOT THE SAME, I tell you! So now when I go visit my folks I make sure we have some to bring home.

Sorry. Got sidetracked. Back to the Peanut Butter Spread.

Only a few simple ingredients:

2 cups brown sugar
1 cup water
2 Tablespoons light corn syrup (Karo)
2 teaspoons maple flavoring
2 cups creamy Peanut butter
2 cups Marshmallow Creme

In a small saucepan combine the first 4 ingredients.

Stir with a wire whisk.

Over medium high heat bring the mixture to a boil stirring constantly.

Remove from heat and cool completely.

Once it is cooled place into mixer bowl with paddles.

Add the peanut butter and marshmallow creme and mix gently at first till it is combined, then faster till it is fluffy.

YUM!!! You will not be disappointed! It is also good as a snack on graham crackers. I hope you try it and I hope you enjoy it as much as we do!

  5. Thank you so much for this recipe. I have made it time and time again and gave it away as Christmas gifts for family. My husband and I honeymooned in Amish Country (Holmes Co., OH) and we try to go back at least once a year. My hubby fell in love with the peanut butter spread they serve various places there and until I found your recipe, I had never been able to duplicate it. Thank you for sharing this! Now I am on a hunt to find a duplicate recipe for the delicious ham loaf that they serve down there!
