Take Two Frittata


In the Spring when the planting season is upon us I always struggle to divide my time in the kitchen and outside. As much as I love to cook and bake, I find it impossible to spend more time in the kitchen than absolutely necessary. Today is no different. I knew I wouldn't want to take time for much of a lunch today because the weather is perfect and I want to spend the day(s) outside when it is like this so I decided breakfast can be where I give my body most of the fuel it needs to get through the day. It took a little bit longer than grabbing something baked and a cup of coffee or tea but I think you'll agree that it was also much more healthier than that. I remembered that I had a few juice oranges in the fridge and so I topped off my breakfast with fresh squeezed orange juice. YUM! And the strawberries were pretty tasty as well!


The ingredients are easy to remember- just two of everything whether it's tablespoons or pieces or cups. One ingredient that missed the picture was the two tablespoons milk I whisked into the eggs.

I put a little bit of oil into a small saute' pan and added the veggies and let them cook till the spinach was wilted and the onions and mushrooms were just beginning to brown around the edges of the pan. While these are cooking whisk the eggs and milk together, shredd the cheddar cheese, and crumble the bacon. Pour eggs over veggies and turn burner on low and place the lid on the pan. Allow to cook slowly till the eggs are set. DO NOT STIR! To avoid over browning the bottom I turned the burner off when the eggs were almost set and with the lid on top they finished by steaming. Gently remove from pan with a rubber spatula onto a serving plate and enjoy.

A couple of mornings ago as I was preparing this same dish I was looking forward to a peaceful breakfast but it was not to be. I ended up having to hurry it up by stirring the eggs because just as they were beginning to cook my hubby called and wondered if I could go get two gallons of antifreeze and bring it to him on the road somewhere. I thought that sounded more important and urgent than the perfectly prepared peaceful breakfast☺
