Chipotle Chicken and Rice Wrap

                                                            Join me for lunch?

Since I love brown and wild rice pilaf and no one else in the house does, I sometimes make a bunch of it and incorporate it into my lunches when I'm alone. And who doesn't love leftover grilled chicken?! I will purposely make so that there are leftovers of this kind around. It is fantastic sauteed with all kinds of veggies. Today as I was doing some deep cleaning I was thinking about the fresh veggies and herbs in my garden and how I could add them to my lunch and decided that I would add spinach, kale, cilantro, and some Spring onions to the mix. It was a delicious wrap!

Just as I was ready to sit down to eat my husband called and asked if I would like to meet him at Red Robin for lunch :( I would definitely have preferred his company eating Red Robin food over a solitary lunch no matter how yummy, but we decided to try it some other time :).

1 Sun Dried Tomato Tortilla
2 ounces grilled chicken
1/3-1/2 cup rice
Spinach, Kale, Onions, Sweet Red Pepper, and hot pepper rings, your preferred amount
2 Tablespoons CoJack Cheese, shredded
Chipotle Mayo
Fresh Cilantro
Olive Oil
Sour Cream

Saute' veggies, herbs, and chicken in a little olive oil.

Heat the rice and assemble the yumminess in the tortilla, wrap it up and serve with sour cream. Enjoy!!

  2. I'm planning grilled chicken wraps for dinner tonight. I'm also planning to tweak how I usually make them by stealing some of your ideas! Definitely on board with chipotle mayo.

  5. What a great wrap! I never would have thought to add rice, but it sounds incredible! I, too, make things for lunch that no one else in the family will touch...like hummus :)
