Chipotle Chicken and Rice Wrap

Since I love brown and wild rice pilaf and no one else in the house does, I sometimes make a bunch of it and incorporate it into my lunches when I'm alone. And who doesn't love leftover grilled chicken?! I will purposely make so that there are leftovers of this kind around. It is fantastic sauteed with all kinds of veggies. Today as I was doing some deep cleaning I was thinking about the fresh veggies and herbs in my garden and how I could add them to my lunch and decided that I would add spinach, kale, cilantro, and some Spring onions to the mix. It was a delicious wrap!

Just as I was ready to sit down to eat my husband called and asked if I would like to meet him at Red Robin for lunch :( I would definitely have preferred his company eating Red Robin food over a solitary lunch no matter how yummy, but we decided to try it some other time :).


1 Sun Dried Tomato Tortilla
2 ounces grilled chicken
1/3-1/2 cup rice
Spinach, Kale, Onions, Sweet Red Pepper, and hot pepper rings, your preferred amount
2 Tablespoons CoJack Cheese, shredded
Chipotle Mayo
Fresh Cilantro
Olive Oil
Sour Cream

Saute' veggies, herbs, and chicken in a little olive oil.


 Heat the rice and assemble the yumminess in the tortilla, wrap it up and serve with sour cream. Enjoy!!
