Scrumptious!!


If you like easy ice cream desserts, (and I do), you will love this one! It has in it everything that is delicious! Well, not quite everything but it has coconut, chopped pecans, crunchy Rice Krispies, butter, brown sugar, and ice cream. It's hard to go wrong with a combination like that, eh?! It is great eaten plain or with any ice cream topping you prefer. Today I made strawberry topping. YUM!!


I will share the topping recipe in another post. As simple as it is, it deserves it's own blog post because it's better than any boxed Danish Dessert you've ever made.☺

Preheat oven to 300°.

For the crust:
2 cups Rice Krispies
½ cup pecans, chopped
½ cup flake coconut
1/3 cup butter, melted
½ cup brown sugar

Vanilla Ice Cream, (approx. 1 gal.)

Mix the first 3 ingredients and. Spread evenly in a shallow pan and toast in the oven for 15 minutes or till toasted to your preference.


 Stir every five minutes so it toasts evenly. Remove from oven and add butter and brown sugar.


Press on bottom and up the sides of  a 9 x 13 pan. Reserve some crumbs for the top. Freeze.


Spoon ice cream onto frozen crust and allow to sit for a bit so it spreads easier.


Spread evenly and top with reserved crumbs.


Enjoy!
