Peanut Butter and Snickers Ice Cream Cake and a 14th Birthday

I asked Anthony a while ago what kind of cake he wants for his birthday. Like usual he said a round chocolate one.
 
Okaaayy, but that's what it was last year... and the year before that.
 
Sooo, I used my persuasive powers :) and when I mentioned an ice cream cake he sounded enthused about that so I decided to make this one. You know, play it safe with peanut butter and chocolate. It turned out really yummy and didn't have an over-powering peanut butter flavor, which I liked.
 
 

I usually take a birthday lunch or some kind of treat to school on the day of the children's birthdays. Anthony's class usually enjoys the pizza that I make so they usually get a Homemade Pizza party. (For a chewy delicious crust click here) I served a tossed salad and chips and lemonade as well.
 
Ice cream always goes well with pizza so this cake came in handy, and the kids who ate some seemed to love it!
 
Ingredients:
For the Crust:
1 pkg. Oreos, icing removed and crushed
¼ cup butter, melted
Combine and press into the bottom of a 10 inch Spring Form pan. I lined mine with parchment paper for easy removal. Bake at 350 degrees for 10 minutes. Cool completely.
 
For the first layer:
10 squares Peanut Butter Snickers candy bars, chopped
(enough to cover the crust)
2½ quarts Vanilla Ice Cream
½ cup Creamy Peanut Butter.
Combine in a large mixer bowl. Whip it up till it's smooth with the paddle attachment. Set aside, or rather in the freezer until ready to assemble.
 
Second layer:
½ pkg. Oreos, icing removed and crushed
¾ cup Peanuts, coarsely chopped
Homemade Magic Chocolate Shell Drizzle

Magic Shell:
8 oz. chocolate chips
2 Tablespoons Coconut Oil
Melt in microwave or in a double boiler. Allow to cool before pouring over ice cream.
 
 
Third layer:
2½ quarts Vanilla Ice Cream
3 Tablespoons Hershey's Caramel Syrup
Whipped. (See above for first layer)
 
Place into freezer after each layer to keep it frozen properly.
 
Suggested garnishes:
Peanut Butter Drizzle
Chopped PB Snickers Bars
Fudge Topping drizzle
Chopped Peanuts

Anthony has a sweet personality, a great sense of humor and a sincere heart. We are blessed beyond measure to call him Son! He is self motivated and doesn't usually need to be told twice to do something. He loves to hang out with his brothers and laughs a lot. He is neat and tidy and responsible. He loves to read and bake and has an inquisitive mind. He does his homework diligently without us having to remind him and has a personal goal for his report card that involves an A+ in every subject. He's almost there! :) I have enjoyed seeing him growing and maturing spiritually as well as physically and intellectually in the last few years.
 
And because I'm a realist I'll have to admit to one thing he does that can usually at least make me feel like rolling my eyes. And I'm pretty sure I have already done so. Because of his inquisitive, perfectionist nature he is very technical about the way things are presented in a conversation. If you say/present anything incorrectly at all he will make a very technical correction. Deep breath. haha
 
He is a wonderful son and adds lots of sparkle and sunshine to our lives! And is loved very much by all of us.

      He really is a sweet blessing. Always calm and pleasant :) and he was a VERY good baby! I always say he did absolutely nothing except sleep and eat for the first three months. Sure was nice with a busy 2 yr old and 3½ year old around!

    You've really done it now, Martha. Do you realize that this cake is so fantastic he will want it each and every year? I think I might want this cake every year!
