Blue-Raspberry Streusel Muffins

Perfectly Scrumptious!


The recipe card for these came in the mail years ago and has been in my cupboard all this time. Not once did I make them until now. Can't imagine why!! The original recipe only had one of the berries in it but I had both on hand so I thought I would put them both in. They turned out SO yummy! They made my house smell wonderful as they baked!

Ingredients:
1½ cups all purpose flour (Gold Medal)
½ cup sugar
2 teaspoons baking powder
1 egg, room temperature
½ cup very soft butter
½ milk, room temperature
½ cup each blueberries and red raspberries,
fresh or frozen and unsugared

Streusel Topping:
½ cup chopped pecans
½ cup packed brown sugar
¼ cup all purpose flour
1 teaspoon cinnamon
3 Tablespoons butter, melted

1. In a bowl, stir together flour, sugar, and baking powder.

2. In another bowl whisk together egg, milk, and butter.


3. Stir the liquid into the dry ingredients until flour is just moistened.


4. Gently fold in the berries.


5. Spoon into 12 paper lined medium sized muffin cups.


6. Combine the topping ingredients until crumbly.

7. Sprinkle muffins generously with the topping mixture.


8. Bake @ 375° for 20-25 minutes or until golden and the centers are baked.

9. Remove from pans and cool on a wire rack.

they are even better on day two!!
